What to check on a bread label

  • The gluten-free claim. In NZ this is your strongest signal — it legally means no detectable gluten under the FSANZ standard.
  • "Wheat free" is not "gluten free". A wheat-free loaf can still contain barley, rye, or oats. This wording matters especially for oat-based breads — oats can't legally be labelled gluten free in NZ at all.
  • Malt. Some multigrain and dark loaves use barley malt extract for colour and flavour — that's gluten.
  • "May contain" statements. Breads baked on shared lines often carry a precautionary gluten statement. How much weight to give these is a personal call to make with your health professional.
  • In-store bakeries. Airborne flour and shared slicers make cross-contamination likely outside dedicated gluten-free facilities, even when the recipe is gluten free.

Why can some overseas "gluten free" breads not be sold as gluten free in NZ?

Some European gluten-free breads use gluten-free wheat starch and meet the EU threshold of under 20 ppm — but if gluten is detectable at all, they don't meet the stricter NZ/Australian definition and can't carry a gluten-free claim here.

Is sourdough bread gluten free?
